I’ve done some research and have found players who played on both the Vikings and Cowboys.
Randall Cunningham
Randall Cunningham was drafted by the Philadelphia Eagles in the 2nd round of the 1985 NFL Draft, out of UNLV. With the Eagles, he was known for his elusive running ability and was a frequent contender for Pro Bowl selections.
In 1998, he had a career resurgence with the Minnesota Vikings, leading a high-powered offense that set the record at the time for most points scored in a season. That year, Cunningham was named First Team All-Pro and won the Bert Bell Award for the Player of the Year.
He retired after the 2001 season, after a season each at the Dallas Cowboys and Baltimore Ravens. Cunningham was inducted into the College Football Hall of Fame in 2016.

Xavier Rhodes
Drafted 25th overall by the Vikings in the 2013 NFL Draft, Xavier Rhodes quickly established himself as a high-level performer in the secondary.
With the Vikings, Rhodes was recognized as a top cornerback in the league, earning Pro Bowl selections in 2016, 2017, and 2019. His 2017 campaign was particularly impressive, as he was named First-Team All-Pro after tallying 56 combined tackles and 2 interceptions.
Rhodes joined the Indianapolis Colts for the 2020 season, where he continued to demonstrate his prowess in pass coverage. Rhodes’ combination of size, speed, and ball skills make him a formidable opponent for any wide receiver.
Brad Johnson
Brad Johnson is best remembered for his tenure with the Minnesota Vikings and Tampa Bay Buccaneers. Johnson was drafted in the ninth round of the 1992 NFL Draft by Minnesota and went on to have a 17-year career in the league.
Johnson served as the Vikings’ starting quarterback for several seasons in the mid-to-late ’90s, putting up solid numbers and earning a reputation as a reliable, if not spectacular, signal-caller. After the Vikings, he led the Washington Football Team to the playoffs and was named to his first Pro Bowl.
In 2001, Johnson signed with the Tampa Bay Buccaneers, where he would achieve his greatest success. In his second season with the team, Johnson helped lead the Bucs to a victory in Super Bowl XXXVII, beating the Oakland Raiders 48-21. That same year, he was named to his second Pro Bowl.

Matt Cassel
Quarterback Matt Cassel had a significant 14-year NFL career from 2005 to 2018, the pinnacle of which came as he filled in for an injured Tom Brady in 2008 and led the New England Patriots to an 11-5 season.
Cassel, a seventh-round draft pick, went on to have a Pro Bowl season with the Kansas City Chiefs in 2010, throwing for 3116 yards and 27 touchdowns.
Throughout his career, he played for various teams (7 in total) and was often brought in as a solid backup option. Cassel accumulated over 17,500 passing yards and 104 touchdowns in his career, showing durability and readiness when called upon.

Brooks Bollinger
Brooks Bollinger was drafted in the 6th round of the 2003 NFL Draft by the New York Jets. He spent time with the Jets, Minnesota Vikings, Dallas Cowboys, and Detroit Lions during his NFL career, which spanned from 2003 to 2008.
Bollinger played primarily as a backup quarterback over the course of his 5-year career but had opportunities to start due to injuries or ineffective play by the starters (9 games with the Jets in 2005).
Over the course of his NFL career, he completed 211 of 360 pass attempts for 2,226 yards, throwing for 9 touchdowns and 9 interceptions.
